What do you do with leftover pumpkins from Halloween??











Make Pumpkin Pie of course!!!
'Tis the season for pumpkin pie! I had my halloween pumpkins just sitting on the porch, so I decided to make homemade-all-the-way pumpkin pie. I pitted and cleaned out my pumpkin and roasted it in the oven, scooped out all the pumpkin flesh and pureed it up and then made my pie. After making the pie crust of course. I topped it with whipped cream (no! not cool whip!) seasoned with a dash of pumpkin pie spice, vanilla, & brown sugar. YUM!

Camo Cake


So I need a professional photographer for my cakes. They could look a whole lot more appetizing..or could they? Camoflauge cake?! I would never look at a camo cake and think "Mmmmm, that looks so good!" Would you? That's how I felt while making these colors and decorating this camo cake. But you know what??? It was really good on the inside! I made the chocolate cake from scratch and made a vanilla pudding (made with cream) filling between the layers. It was moist and delicious!

My 1st official (on the job) Cake




My cousin Dawn Day (Tait) asked me to make her wedding cake. I was very nervous and excited to say the least! It was a lot of planning and a lot of hours working, but it all paid off. Here it is!! My first being hired and paid cake...Thanks for the opportunity Dawn!

60th Wedding Anniversary Cake








My cousin and I made/decorated these cakes for my grandparents 60th wedding anniversary. It was so much fun working together, we both thought the same way...so it was fun and easy to bust these cakes out on Saturday afternoon. They are a vanilla cake with a yummy strawberry cream cheese filling and decorated with buttercream icing. We added color by the fresh flowers on each cake.

Chocolate Lovers Unite...This One's For You







I made Nate's annual birthday chocolate cake. This time I talked him into homemade frosting, none of that waxy tasting store boughten stuff (sorry, i know some of you out there like that stuff). It turned out lookin' so nice! I finally got a smooth finish on my cake. Chocolate Fudge Cake with chocolate buttercream icing between the layers and the outer. Milk Chocolate curls on top. Yum! You'll want a glass of milk with this one!

Wedding Cakes







I worked on these beauties from 2-7 p.m. I'm tired! My feet hurt & my kitchen is a MESS!!! Always let your cake decorator know how appreciated they are...you have no clue how much time & effort goes into decorating cakes, until you do it yourself. It was fun though, like having a baby, I'll forget how tired I am and want to do it again.

Learning Fondant











I have been self teaching myself fondant decorating. I still perfer buttercream decorating, it tastes better, but it was fun and my son loved his birthday cake! FYI: When rolling out fondant over & over again, be prepared for it to crack more easily. It's just like rolling out roll dough, after rolling it time and time again it begins to not look as smooth anymore. Try to get the wrinkles out before rolling, like by tossing it around like a pizza. I wish I would've then my top would've looked better. Maybe others can learn from my mistakes, or if you are a fondant decorator and reading this, you can give me some advice.

Pink Princess

MARCH 21: Happy Birthday Kenz! I was pleased to make my sis in law's b-day cake this year...here are the results! It's crazy how after I'm all done, I just look back over it and find all the things I'd change or do better for next time...but oh well, next time!


MARCH 10: This is my styrofoam cake, now I can practice as though it were an actual cake...so much fun! So for what it's worth...just thought I'd share my newest creation. Enjoy! Doesn't it look like it would taste good? Just imagine chocolate cake with a white chocolate mousse filling in between the layers...yum...or better yet...a raspberry mousse, now that would be tasty. Hungry???


MARCH 2: So I now made my official rose cake. Aren't the roses gorgeous? I also learned on this cake how to make grape clusters and scallops...they still need some practice. Can I just tell you how much fun I'm having!!! OK, I just did. I go to bed dreaming about different ways to decorate cakes and things to try. I get so anxious and excited when it's time to decorate a cake, it's almost as fun as Disney Land ;)



FEBRUARY 24: Roses & Shells...this is now my new obsession. And tonight during my practicing, I finally conquered it!
Look how good my roses & shells look! (for me anyway, now some pro might think otherwise, so if you're a pro looking at this...don't comment) I AM HAVING SO MUCH FUN!!!

One of my Wildest Dreams




FEBRUARY 22: One of my dreams has been to own my own cake decorating business, & have a specialty in wedding cakes....so....I have begun cake decorating classes. I love them! I am learning so much. It takes so much practice for me though, nothing comes natural to me for some reason. My mom's birthday was in February, so I volunteered to make the cake. Here it is! As you may see, I have crumbs in my icing that's covering the cake!!! I was so frustrated...I know how to ice cakes...but this one however, didn't cooperate. I realize now (thanks to my knoweledgeable teacher), it was undercooked just a bit. Who knew....you don't check a cake's doneness by the toothpick, use the touch method...if it bounces back it's done. Also, leaves grow up! "My flowers need to be in a vase of water." (That's what my teacher told me) I won't make that mistake again. I had so much fun decorating it, after I got over the frustrating part of the crumbs. Next lesson will be how to get a nice, clean frosting over the cake itself. And I'm still learning....on my sides I shoul've used white icing instead of yellow for the dots. Does this scream St. Patricks Day to you too?? I should've went with pink, I just wanted to do something different. This week will be my 4th class. I'll keep posting my improvements.
